Glynn Purnell's new Birmingham restaurant Trillium at Snow Hill

Great British Menu and Saturday Kitchen chef Glynn Purnell is opening a new restaurant in Birmingham city centre. Trillium is set to open in September at Snow Hill, near Colmore Row.

It comes after the TV chef closed his famous Purnells restaurant in Birmingham's Cornwall Street last year due to "economic pressures and declining footfall". It had been at the forefront of city centre restaurants for 17 years.

This time, Purnell is opening Trillium with Birmingham wine expert Phil Innes, from acclaimed Loki Wine , which has wine stores in Harborne and Great Western Arcade.

Less formal than Purnells, the new restaurant will be based around shared dining with an ever-changing menu of small and large plates, all designed to be enjoyed across the table so diners can sample lots of dishes with a "variety of tastes, textures, and influences".

It's promising "punchy flavours, global inspiration, and a creative energy that ensures no two visits are the same" with a wine list curated in a similar fashion.

Purnell said: “At Trillium, choice is everything. We want guests to explore the menu in whatever way suits them — whether that’s a classic three-course meal or a custom selection of sharing plates. It’s about dining the way you want to, without rules.”

The wine list, curated by Phil Innes of Loki Wine, pictured above and below with Purnell, will reflect the same spirit of exploration. It will rotate regularly to put the spotlight on everything from hidden gems and low-intervention producers to iconic names.

“We’re building a wine list that’s as important to the restaurant as the food,” added Innes. “It’s not about prestige — it’s about offering a dynamic, ever-changing selection that showcases undiscovered treasures and unexpected finds. There will always be something on the list to surprise and delight.”

When it comes to the look and feel of the new restaurant, Trillium will have a vibrant outdoor terrace. The decor is said to be "inspired by folklore and nature’s rhythms" with interiors having a "romantic palette of wine-stained reds, beetroot, and plum — softened with sage, clay, and petal pink".

Expect to see hand-painted finishes and etched glass along with dappled woodland lighting in this new venture by Brummie chef Purnell.

"Trillium is designed to feel welcoming and unpretentious," noted a member of the restaurant's team. "It's a place for locals, visitors, and anyone who believes the best meals are shared.

"The menu invites exploration and flexibility — ideal for sampling yet equally suited to those who prefer a more structured, traditional dining experience."
