Sauces are the soul of many dishes and they can help to take something like a standard meat and three veg or a slice of cake to a restaurant quality meal. Season Cookery School at Lainston House can teach you how to master the art of sauces and use them to bring your cooking to the next level with their Saucy Sauces half-day course.



Saucy Sauces will be led by Sylvain Gachot, the cooking school manager at Season Cookery School. The French-born chef has been a member of the team at Lainston House and the Season Cookery School for over 8 years.

In the class, Gachot will demonstrate how to create the bases for many dishes and sauces: stock. He will cover chicken stock, shellfish and fish stock, and vegetables bouillon. Other sauces include beurre blanc, fish veloute, hollandaise sauce and mayonnaise. You'll also get tips for making the perfect roux, an essential step for many white sauces and gravies. The course will involve a mix of demonstrations and hands-on cooking, with plenty of recipes you can take home to try at home. The course covers some of the fundamentals of cooking and you'll learn skills that can then be adapted and applied to many other dishes.

The course is a half-day course. Things kick off at 9:30am and the day will finish at 1:30pm. You're best to get there at 9am to make sure you've got time to get settled and have a chance to grab a cuppa and have a chat with the chef and others on the course.

Lainston House is located on Woodman Lane in Winchester. As well as being the home to Season Cookery School, Lainston House also has a restaurant and hotel accommodation. It is about 15 miles from Southampton and about a 30 minute drive.
