The restaurant menu describes the dish as "Roast saddle of pork stuffed with spinach, apricot and sausage, served with an apricot brandy sauce." For me, it was a dish to die for. It tasted as good as it looks. The pork was cooked to perfection and the sweetness from the apricot and brandy added to the flavour. The dish comes accompanied with oven roasted rosemary potatoes. The restaurant is situated in Quarry Street in Guildford.
