Aubergine and tofu may sound like rather boring, but this vegetable side dish is probably one of the most delicious meals on Mae Ping's menu. At £6.50, the aubergine and tofu is sautéed with fresh crushed garlic, chilli, thai sweet basil, and an oyster sauce. The tofu mops up all the flavours, and the cooking method gives it a crunchy texture. The only down side is that the oyster sauce makes in unsuitable for vegetarians.
