This Thai dish is just how you would expect a jungle to be: hot and exotic. A non-coconut cream red curry, it is a vegetarian dish that will make your lips tingle.

It is made with seasonal vegetables, kaffir lime leaves, and krachai roots (a bit like ginger).

On the first bite you think, 'hmmm, this is nice,' and then a moment later the chillis kick in. It is a medium hot curry, with spicy flavours that warm up your insides, and is full of flavour. All the veggies soak up the juices to create a really moist and delicious meal. Perfect when served with rice or noodles.
