John Lewis's Espresso Bar has very attractive looking cakes, but what caught my eye yesterday is their apricot danish. I've been put off from danishes in recent years because cafes always do tons of pastry with very little fruit. Here however, everything was perfectly balanced. The apricots were ginormous, and the glaze made it look so attractive. There was just the right amount of puff pastry, and the subtle flavour of vanilla from the custard complimented everything beautifully.
