When John Rensten set up a gastro pub, he decided to go out and source many of his own ingredients by foraging in the woods. Not only did this give his customers great food, but also gave John a chance to unwind during his hectic schedule.
John has now left his pub behind, but that doesn't stop him foraging, nor does it stop his customers from getting fresh ingredients for their meals. He set up
Forage London, a series of popular nature walks and courses that teach people how to identify edible plants, as well as learning about herbalism, medicine, and cookery.
The walks last about three hours and includes tastings of foods and drinks he has made with the ingredients collected. As well as being a tasty experience, it can also give you ideas about the kinds of dishes you can cook. Places sell fast, so bookings should be made as soon as possible.
