I don't like carrots and I don't like walnuts so logically a loving relationship between me and carrot cake doesn't sound likely. But when has logic ever worked with humans? Add some flour, eggs, and a bit of sugar, and carrots suddenly transform from a yucky vegetable to a delicious delight.

Moka's carrot cake is definitely the best I've ever tasted; this slice was slightly chilled, making it perfect for summer. Yeah, yeah, I know it's autumn now, but the weather's still warm. Even when it gets colder, the slightly spiced grates of carrot will go down well.

The cake is amazingly moist, looks pretty, and the addition of chopped walnuts provides a subtle taste with extra texture. The topping is made from a sweetened soft cheese, sprinkled with nuts, and is the bit I leave till last.
